eat up

this is for my mexican friend Grace who has a fun blog where i learn uh-lot about raisin' little kiddos! 'cause she has 4!

our favorite healthy meal:
whole wheat spaghetti with arugula. . or spinach, because i think arugula stinks

8 oz uncooked whole wheat spaghetti
2 tablespoons olive oil
1/4 teaspoon crushed red pepper (or less, depending on preference)
2 garlic cloves, minced (i do 3)
1 cup chopped tomato (i do 3 tomatoes)
1 pound arugula, or spinach--i just buy a bag of spinach
1 1/2 tablespoons red wine vinegar (i do 2)
3/4 tsp salt
1/2 tsp pepper
1/2 cup grated parmesean cheese


Cook pasta, drain. heat 1 tablespoon oil over med-high heat in skillet, or dutch oven (i'm not sure what a dutch oven is. i have an american skillet, though). add red pepper & garlic; saute 20 seconds. add tomato & arugula/spinach; saute 2 minutes or until arugula/spinach wilts. spoon into a large bowl. add 1 tablespoon oil, spaghetti, vinegar, salt & pepper; toss well. sprinkle with cheese. really good, and oddly nutty-tasting!

and there's more. . i'm learning to love to cook (wait, maybe 'enjoy' is a better word), and i love to cook things the husband loves the most. here are a few of our favorite things:

PW's sherried tomato soup. so light, but rich. 
a personal favorite: PW's stir fry, with an ollld fried rice recipe
i could eat bowls and bowls of this. fried rice. i add a few (a lot) more strips of bacon,
and several more eggs. it is dee-vine.
well, this was PW's asian noodle salad, the husbands favorite.
unfortunately, this pregnancy has killed me on it. i really
hope i feel like eating it again some day. but not today, or tomorrow.
 
this was Valentine's Day 2010. chicken gumbo, rice pilau, and 
cornbread with extra corn. yum. 







my husband's winter favorite: French onion soup with toasted mozzarella cheese. too much cheese? nah.






i was really craving these deviled eggs one day
not too long ago. so, i made a whole
plate-ful. i almost ate the entire thing.
